Ingredients:

Meat Sauce:

  • 2 onions, finely chopped

  • 2 tbsp olive oil

  • 1 kg minced meat (pork, beef, or lamb)

  • 1 cup grated tomatoes or carton

  • 1 glass red or white wine (optional)

  • 1 tsp oregano

  • Salt and pepper to taste

  • ½ cup chopped parsley

  • 1 chicken stock cube

  • Optional: 3-4 garlic cloves, ½ tsp cinnamon, 1 bay leaf, ½-1 tsp cayenne.

Béchamel Sauce:

  • 5 tbsp Flour

  • 180g Butter

  • 4-5 cups Milk (as needed)

  • 1-2 cup mixed grated cheese

  • Salt pepper and pinch nutmeg (optional)

Vegetables:

  • 4 aubergines (eggplants)

  • 4 courgettes (zucchini)

  • 5 potatoes

  • Olive oil for brushing or frying


Directions:


  • Slice the aubergines, courgettes, and potatoes into rounds.

  • Option 1: Lightly brush aubergines with oil and bake at 180°C (350°F) for 20-25 minutes.

  • Option 2: Fry the aubergines, courgettes, and potatoes in a little oil until golden.

  • Heat oil in a pan, cook the onions until soft.

  • Add the minced meat and brown it.

  • Stir in tomatoes, wine (optional), oregano, salt, pepper, and parsley. Add garlic, cinnamon, and cayenne for extra flavor if desired. Simmer for 20 minutes.

  • Melt butter in a large pot, add flour, and stir to form a paste.

  • Gradually whisk in milk until the sauce thickens. Stir in grated cheese.

  • In a baking dish around 23cm×33cm, layer potatoes, aubergines, courgettes, and the meat sauce.

  • Top with béchamel sauce.

  • Bake at 180°C (350°F) for 45-50 minutes, until golden
